Shellfish ? Cholesterol content?

چکیده
We've all heard about the "good stuff" in seafood (and if you haven't, check out the Health benefits of fish oils [2] in the Go Ask Alice! archives), but cholesterol [3] often gets less attention. Gram for gram, cholesterol levels in most shellfish are comparable to the levels in beef, pork, and poultry. But, unlike other meat, shellfish actually have low levels of saturated fat [4]. This is critical for heart disease prevention because too much saturated fat can increase your lowdensity lipoproteins (LDL) which, in higher amounts, can form plaque that hardens and narrows arteries over time. If you?re concerned about dietary cholesterol and its impact on your health, considering looking at Unscrambling conflicting info about eggs [5] in the Go Ask Alice! archives for more information.

Sterol composition of shellfish species commonly consumed in the United States
BACKGROUND Shellfish can be a component of a healthy diet due to a low fat and high protein content, but the cholesterol content of some species is often cited as a reason to limit their consumption. Data on levels of non-cholesterol sterols in commonly consumed species are lacking. OBJECTIVE Shellfish were sampled and analyzed to update sterol data in the United States Department of Agricult...
متن کاملEffects of low carbohydrate diets high in red meats or poultry, fish and shellfish on plasma lipids and weight loss
BACKGROUND Low carbohydrate diets (LCDs) have been demonstrated to be effective tools for promoting weight loss and an improved plasma lipid profile. Such diets are often associated with increased meat consumption, either poultry, fish, and shellfish (PFS), which are generally high in polyunsaturated fat (PUFA) or red meats (RM), generally high in saturated fat (SFA). The fatty acid profile and...
متن کاملThe reactivity of desmosterol and other shellfish- and xanthomatosis-associated sterols in the macrophage sterol esterification reaction.
The acyl-CoA: cholesterol acyl transferase (ACAT) reaction in macrophages is a critical step in atherosclerotic foam cell formation, but little is known about the reaction's sterol substrate specificity. In this report we examine the macrophage ACAT reactivity of the shellfish sterol, desmosterol, and other sterols found in man because of shellfish ingestion or in association with the foam cell...

Cholesterol is a waxy substance found among fats in the bloodstream and in all cells throughout the body. Cholesterol is required for the body’s normal formation of cell membranes, other body tissues and some hormones. The liver typically produces as much cholesterol as the body needs — about 1,000 milligrams a day. Individuals consume additional cholesterol when they eat foods derived from ani...
متن کاملContribution of Shellfish Consumption to Lower Mercury Health Risk for Residents in Northern Jiaozhou Bay, China
Fish and marine mammal consumption are an important pathway for human exposure to mercury. The low mercury content in shellfish poses a low mercury health risk to people who consume shellfish. The objectives of this study are to detect mercury concentrations in different species of shellfish and to calculate the mercury health risk from shellfish consumption among traditional residents near nor...
